Snickerdoodle Pumpkin Cream Cheese Blondies

I found myself searching blogs for something different to make (don't I always?). Once I saw this combination of pumpkin and blondie, I had to try it. WOW. I've made snickerdoodle blondies before, but this recipe is much better than the other one. Also from now on, whenever I make something that is cinnamon/sugary, I'm going to sprinkle cinnamon sugar on the bottom of the pan, as called for in this recipe. It gave the bottom of the bars a crisp sweetness that just perfected the dessert.

INGREDIENTS

BLONDIE
8 ounces (two sticks) unsalted butter, at room temperature
1 cup granulated sugar
1 cup loosely packed light brown sugar
3 ounces Mascarpone cheese, at room temperature
2 eggs1 tsp. vanilla extract
½ tsp. baking powder
1 tsp. baking soda
Pinch of salt
¾ tsp. cream of tarter
¼ tsp. freshly grated nutmeg
2 cups all-purpose flour

Cinnamon Sugar for coating (about 1/3 cup)

PUMPKIN CREAM CHEESE FILLING
8 ounces cream cheese, at room temperature
½ cup solid packed pumpkin
½ tsp. pumpkin pie spice
½ tsp. vanilla extract
1 egg
2 TBSP flour
½ cup granulated sugar

DIRECTIONS
Preheat oven to 350F. Butter a 9 by 13-inch pan. Sprinkle cinnamon sugar and move pan around to make sure that the bottom and sides are coated. Set aside.
In a medium bowl, sift together the flour, baking powder, baking soda, salt, nutmeg, and cream of tartar. Using a stand mixer, cream together the butter and sugars. Beat for three minutes. Scrape down the bowl.
Add the Mascarpone cheese and beat until fully incorporated. Add eggs, one at a time, scraping down the bowl after each addition. Add the vanilla and beat for another 30 seconds. On low speed add the sifted flour mixture. Mix until fully incorporated.
Spread mixture evenly into prepared pan. This will be hard as it is a thick batter. It may easiest to just wet your hands a little and press the batter into the pan. Then even it out afterwards with a spatula.
Using a clean bowl, cream together on medium high speed cream cheese and sugar until light and fluffy, about three minutes. Add the pumpkin and beat another minute until fully incorporated. Add vanilla and egg, and beat until incorporated. Add pumpkin pie spice and flour and beat until incorporated.
Pour on top of snickerdoodle batter. The best you can swirl it around, they are very different consistencies and so this will be hard to do. Don’t worry, you aren’t trying to show the swirl, just get it in there. You might have to move some snickerdoodle batter back into place. Just press down with a spatula.
Sprinkle more cinnamon sugar on top of the batter.
Bake for 30-35 minutes, check your oven starting at around 25 minutes.
Remove from oven and let cool on a wire rack for 5 minutes. Cut into squares and serve.

Lemon Berry Crumble Bars

These bars were nice to make because they were pretty versatile. Any type of berry could be used (I used raspberry) and I also only made half of the recipe in an 8x8 pan. They were quick and easy and pretty tasty!

INGREDIENTS
1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup unsalted butter
1 egg1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
2 teaspoons lemon juice
2 cups fresh or frozen blueberries
2 cups fresh or frozen raspberries
1/2 cup white sugar
3 teaspoons cornstarch

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Line a 9×13 inch pan with parchment paper and spray with nonstick cooking spray. Stir together 1 cup sugar, 3 cups flour, salt, and baking powder in a medium bowl.
In a separate, small bowl, beat together the egg, lemon juice, and vanilla. Using a pastry cutter or food processor, cut the butter and egg mixture into the flour to form a crumbly dough. Press half of dough evenly into prepared pan.
In two additional bowls, mix together 1/4 cup sugar and 1 1/2 teaspoons cornstarch. Gently mix blueberries into one bowl and raspberries into the other. Sprinkle berries evenly over pressed dough — I did half the pan with blueberries and half with raspberries, but you could alternate or even mix the berries if you’d rather. Crumble the rest of the dough over top of the berries.
Bake in preheated oven for 45 minutes or until slightly brown. Cool completely (and even chilling a little helps to ensure they’ll hold together) before cutting into squares.

Jensen Ackles Bars

Hm....how would describe these bars since the name gives nothing away?! They are kind of like a sugar cookie butterscotch bar with a kick of espresso. Sound good? They are! I actually think the espresso was a little much, I could've gone with adding a little less (even though the original baker thought she could've added more). I didn't make the butterscotch sauce to go along with these bars and they tasted just fine all by themselves. I made these just because I was in a baking mood (and therefore had them laying around the house...not good!). Now I know for the future that these are definitely a dessert I would want to serve!

INGREDIENTS
1 1/4 cups (2 1/2 sticks) of unsalted butter, cut into about 6 pieces for easier melting
2 1/4 cups of all-purpose flour
1 1/2 teaspoons of baking powder
2 teaspoons of salt
1 1/4 teaspoon of ground cinnamon
1 teaspoon of espresso powder
2 1/4 cups of firmly packed light brown sugar
3 eggs, slightly beaten
1 teaspoon of vanilla extract
1/2 teaspoon of almond extract

BUTTERSCOTCH SAUCE
INGREDIENTS
1/4 cup (half a stick) of butter
1/2 cup of packed light brown sugar
1/2 cup of heavy cream
1/2 teaspoons of kosher salt (use more or less to suit your taste)

DIRECTIONS
Bars: Preheat the oven to 350F. Butter/spray a 9x13 inch baking pan. Line the bottom with parchment paper and butter/flour the parchment. Or line the entire pan with tin foil (have the foil go over the edges for easy removal) grease and flour the foil.
In a medium, heavy-bottomed saucepan, melt all the butter over low heat. Once the butter is melted, turn the heat up to medium and cook the butter until it turns golden brown and takes on a nutty fragrance. Depending on how high the heat is, this may take several minutes. Stir the butter occasionally and keep an eye on the colour. It will get a little bit 'foamy' but keep cooking until it starts to clarify and then change to a golden brown. Once it has browned, remove it from the heat and let it rest for about 5 minutes.
In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and espresso powder. Set it aside.
In a separate, larger bowl mix the butter and sugar together with a large wooden spoon or spatula (the mixture will be grainy). Add the eggs, vanilla, and almond. Mix well. Be sure the eggs have been well incorporated. Add the flour mixture and stir until thoroughly combined. Scraping down the sides of the bowl as you stir. Pour the batter into the prepared pan. It might be thick so you may have to spread it out with the spatula.
Bake for 30-40 minutes or until a toothpick inserted in the middle comes out slightly moist but with no crumbs. If the edges start to brown too much, remove the pan and cover just the edges with some tin foil. Once they are done, place the pan on a cooling rack and let it come to room temperature. You can serve these alone or with the butterscotch sauce.
BUTTERSCOTCH
In a medium, heavy-bottomed saucepan, melt the butter over low heat. Add the sugar, cream, and salt. Whisk until blended. Bring the mixture to a slow, easy boil. Cook for about 5-10 minutes, stirring occasionally. *It will eventually begin to thicken. Once it does, cook for about 2 more minutes.*
Remove from heat. As it cools, the butterscotch will thicken. You can pour it over the bars just before serving them or pour it on ahead of time (this will result in a thicker, almost frosting-like sauce.)

Butterscotch Chocolate Chip Blondies



So easy and really good! The original recipe said to bake for 45 minutes, but I would check on it at 40 minutes and take the blondies out at that time. I felt the pieces around the edge were drier than those in the middle...and I really like a nice gooey blondie! They made a perfect addition to our impromptu Super Bowl Party. As soon as I knew it, we were expecting 10 people over to our house and I needed to whip up something quick!

INGREDIENTS

1 cup (2 sticks) butter, room temp
1 cup brown sugar, packed
1/2 cup sugar
2 eggs
2 tsp. vanilla extract
2 cups flour
1 1/2 tsp. salt (I like kosher best)
About 8 oz. chocolate chips, butterscotch chips or a combo of both

DIRECTIONS
Grease a 8 x 8 inch pan and preheat the oven to 350 degrees.
In a bowl, whisk together the butter and sugars until they are smooth. Then whisk in the eggs and vanilla. Slowly stir in the flour and salt. Stir in the chips : ) and pour into the greased baking dish. Bake for about 40 minutes or until a toothpick comes out clean.

Apple Blondies with Maple Glaze



These taste like fall! They are so good that I'm adding them to my Thanksgiving dessert menu. I'm making a pumpkin pie (for the first time, can you believe that?) and some sort of chocolate cheesecake, but I love to have some type of bar and/or cookie. These are perfect. They were pretty easy to make too, which will be nice since I will be prepping our house for 17 people on Thanksgiving!

INGREDIENTS
1 cup brown sugar
1 stick unsalted butter, melted
1 egg
3/4 tsp. vanilla extract
1/4 tsp. almond extract
1 cup flour
1/2 tsp. baking soda
pinch of salt
3/4 tsp. cinnamon
1/4 tsp. ground cloves
1/3 cup chopped walnuts
1 medium apple, peeled and diced
2/3 cup confectioners sugar, sifted
1 Tbsp. pure maple syrup
milk or cream

DIRECTIONS
Preheat the oven to 350 and grease an 8×8 pan.
Mix together the brown sugar and butter. Add the egg, vanilla and almond, whisking until just combined. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon and cloves. Add that to the butter mixture, folding with a spatula at the end so as not to overmix. Fold in apples and walnuts. Pour the mixture into the baking dish, and smooth the top. Bake for about 20-25 minutes or until set in the middle.
To make the glaze, combine the confectioners sugar and maple syrup, and drizzle in milk until you get the consistency you want. Drizzle over slightly cooled blondies.

Pumpkin Blondies

Perfect for fall baking! These Pumpkin Blondies were so good...I have to make them again (maybe for Thanksgiving or the Christmas Party?). I divided the batter in half and used butterscotch chips in one half and white chocolate chips in the other. My vote is for butterscotch, or a combination of the two. (1 cup of each mixed into the entire batter would be great!) The recipe also noted that you could use brown sugar or regular white sugar - I opted for brown sugar since white sugar tends to make recipes more crisp and I thought a blondie should be chewy. I'd be curious as to how they taste with regular white sugar though...maybe next time!

INGREDIENTS
2 cups all-purpose flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
¾ tsp. salt
16 tbsp. unsalted butter, at room temperature
1¼ cups brown sugar (original recipe calls for regular sugar)
1 large egg
2 tsp. vanilla extract
1 cup pumpkin puree
1 cup white chocolate chips
1 cup butterscotch chips
½ cup chopped, toasted nuts (optional - I omitted)

DIRECTIONS
Preheat the oven to 350° F. Line a 9×13-inch baking dish with foil. In a medium bowl, combine the flour, pumpkin pie spice, baking soda and salt. Stir together and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter and sugar on medium-high speed until light and fluffy, about 2 minutes. Beat in the egg and vanilla until well combined. Mix in the pumpkin puree. With the mixer on low speed add the dry ingredients and mix just until incorporated. Fold in the white chocolate and butterscotch chips (and nuts, if using) with a rubber spatula.
Spread the batter evenly into the prepared pan. Bake until the edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out with just a few crumbs, about 35-40 minutes. Transfer the pan to a wire rack and let cool completely before cutting.
To serve, lift the cake from the pan using the foil and transfer to a cutting board. Peel off the foil and using a sharp knife, cut into 24 squares.

Pumpkin Spice Cheesecake Brownies


Here we go! These were much better than my previous attempt at chocolate pumpkin brownies. I found two versions of this recipe - the original on Cara's Cravings blog and the second altered version at Beantown Baker's blog. I used the altered version since it made more pumpkin cheesecake batter, making it less of a "brownie". I'm sure they would be great either way though!

INGREDIENTS (makes 16 bars)

BROWNIE BASE
1/4 cup butter, melted
1 cup sugar
1 tbsp pure vanilla extract
2 eggs
1/2 cup all purpose flour
1/2 cup cocoa powder - I used Hershey's Special Dark cocoa
1/4 tsp salt
2 tsp cinnamon

CHEESECAKE BATTER
6oz cream cheese, softened - I used 8oz
1 egg
1/3 cup sugar - I used 1/2 cup
2 tbsp flour - I used 2 Tbsp + 2 tsp
1/2 cup pumpkin puree - I used 2/3 cup
1/4 tsp pure vanilla extract - I used 1/3 tsp
1/2 tsp cinnamon - I used 2/3 tsp
1/4 tsp each ground ginger and ground cloves - I used 1/3 tsp

DIRECTIONS

Preheat oven to 350F. Grease an 8x8" square metal baking pan. Beat together melted butter, sugar, and vanilla, then beat in eggs one at a time. Combine dry ingredients and then gradually stir into butter mixture with a wooden spoon. In separate bowl, beat together cheesecake batter ingredients. Spread about 2/3 of chocolate batter into prepared pan, and spoon cheesecake batter over. Dollop remaining brownie batter over cheesecake batter. Swirl the batters together by running a butter knife back and forth through the pan.Bake for 40 minutes, or until center is set. Cool completely on wire rack and chill before cutting and serving.

Chocolate Pumpkin Brownies


Ever since I made the chocolate chip pumpkin bread last year, I've been wanting to make something else with chocolate and pumpkin - it was such a great combination! However, I wasn't crazy about these brownies. They weren't chocolatey enough! They didn't taste bad but a bit of a cakey texture (I like my brownies fudgy!) and were a bit bland for my taste. My mom liked them though. I made half of a batch in an 8x8 pan since I was just testing out this recipe on a Saturday afternoon. I think I will continue my search for a good pumpkin brownie recipe!

INGREDIENTS

PUMPKIN BATTER
1 tablespoon unsalted butter, softened
3 ounces cream cheese, softened
1/2 cup sugar
1 large egg
1/3 cup canned pumpkin puree
1 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 tablespoon all-purpose flour
1 tablespoon all-purpose flour

CHOCOLATE BATTER
5 1/2 ounces best-quality semisweet chocolate, finely chopped
1 1/4 sticks (5 ounces) unsalted butter, cut into 1-inch pieces
4 large eggs, at room temperature
1 1/2 sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 1/3 cups all-purpose flour
1 heaping cup large walnut pieces (about 4 ounces), optional

DIRECTIONS

PUMPKIN BATTER Preheat the oven to 350°. Lightly butter a 13-by-9-inch baking dish. In a small bowl, using an electric mixer, beat the butter with the cream cheese until smooth. Beat in the sugar, scraping the bowl occasionally. Beat in the egg, then add the pumpkin puree, vanilla, cinnamon and ginger. Stir in the flour.

CHOCOLATE BATTER Combine the semisweet chocolate and butter in a medium bowl. Set the bowl over a saucepan with 1 inch of simmering water and stir occasionally until melted. In a large bowl, combine the eggs with the sugar, vanilla and salt; set the bowl over the saucepan of simmering water and, using an electric mixer, beat at low speed until blended. Increase the speed to medium and beat until the mixture is warm to the touch. Remove from the heat and continue to beat until the mixture is think and fluffy, about 5 minutes. Using a large rubber spatula, fold in the melted chocolate. Sift the flour over the warm batter and fold it in just until combined. Fold in the walnut pieces.
Spread the chocolate batter evenly in the prepared pan. Using a tablespoon, drop dollops of the pumpkin batter all over the top. Using the back of a butter knife, swirl the pumpkin batter into the chocolate; don't overdo it or the swirl pattern will be lost. Bake for about 50 minutes, or until a skewer inserted in the center comes out clean. Let the brownies cool completely before cutting.

Cocoa Brownies with Peanut Butter Chips


Oh my God, these were intense! Not very sweet but VERY chocolatey - my kind of brownie! I used Hershey's Special Dark cocoa which may have had something to do with how rich they were. The original recipe noted that the baker used 1/2 regular cocoa powder and 1/2 Special Dark. I think these would also be great with a cream cheese swirl, which I may try sometime in the near future! In fact, fall is here and I've been looking to try a pumpkin cream cheese swirl brownie....I may have to keep this brownie base for that recipe!

INGREDIENTS
1 1/4 sticks of unsalted butter
1 1/3 cup of white sugar
3/4 cup PLUS 2 tbsp of cocoa powder (I used all Hershey's Special Dark Cocoa)
1/4 tsp salt
2 large eggs
1/2 tsp vanilla extract
1/2 cup flour
1 cup of peanut butter chips


DIRECTIONS
Preheat oven to 325 degrees and make sure rack is in the lower third of the oven. Coat an 8 inch baking pan with cooking spray or line it with parchment paper. In a large heat proof bowl, combine the butter, sugar, cocoa and salt. Set the bowl in a large skillet of water and simmer over medium low heat. Stir occasionally until the butter is melted and mixture is hot to the touch. The mixture will look slightly grainy. Remove from heat and cool until warm.
Add vanilla and stir with a wooden spoon. Add the eggs one at a time mixing thoroughly after each one. When the batter looks well blended, smooth and shiny, slowly add the flour and stir until it's combined thoroughly, then stir vigorously for 30 strokes. Stir in the peanut butter chips. Pour into the baking pan and place a few more peanut butter chips on top.
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool completely then lift up ends of the parchment paper (if used) and transfer brownies to a cutting board where you cut into bite sized pieces.

Graham Cracker Chewy Bars


These were outstanding and so easy to make! I wasn't expecting much, but saw this simple recipe on a new blog I found and was looking for one more dessert to make for my sister's graduation party. I actually made these again a week later for a barbecue. I cut the recipe in half and made it in an 8x8 pan and cut the cooking time down to 17 minutes. When I first cut into the bars, I thought I severely undercooked them since the middle bars were very gooey. However, when I made them a second time I increased the time to 20 minutes and thought they tasted better undercooked. 17 minutes it is! (If I ever make the full recipe in a 13x9 pan, I'm not sure what it will be!)




INGREDIENTS
CRUST

3 cups graham cracker crumbs

3/4 cup (1 1/2 sticks) butter, at room temperature

1/4 cup sugar

2 tablespoons flour
TOPPING

2 1/2 cups brown sugar

4 extra-large eggs (I just used large)

2/3 cup graham cracker crumbs

1 tablespoon vanilla extract

3/4 teaspoon salt

1/2 teaspoon baking powder

1 cup pecans, chopped (I omitted)

Powdered sugar, if desired

DIRECTIONS
Heat the oven to 350 degrees. In a large bowl with an electric mixer, or in the bowl of a stand mixer, beat the graham cracker crumbs, butter, sugar and flour until moist and well-blended. Press the mixture firmly and evenly over the bottom of a 13-inch by 9-inch baking pan. Bake until the crust is golden brown, 10 to 15 minutes.
While the crust is baking, in a large bowl, whisk together the brown sugar and eggs to blend. Whisk in the graham cracker crumbs, vanilla, salt and baking powder until well-blended. Stir in the pecans.
Spread the mixture over the baked crust and return to the 350-degree oven until the filling is dark-golden on top and jiggles slightly when tapped, 20 to 25 minutes. Transfer the pan to a cooling rack and cool completely.
Sprinkle a light coating of sifted powdered sugar over the pan if desired, and cut into 24 bars. The bars can be made 1 day in advance. Wrap in plastic and keep at room temperature.

Peanut Butter Blondies


I was slightly disappointed with these....only because I expected to be the best thing I ever tasted! They were good, don't get me wrong, but I think I was expecting a more chewy blondie than the cookie-type that it actually was. I also cut back on some of the pb cups and pb chips because I thought it looked like a lot! However, if I try these again I would add the full amount. Actually, if I try these again I may use the "Blondies - Infinitely Adaptable" from Smitten Kitchen with PB cups, chocolate chips and pb chips....they had the buttery blondie taste I was looking for!

INGREDIENTS
2 cup flour
1/2 cup cake flour
1-1/2 teaspoon baking powder
1/4 teaspoon salt
2/3 cup smooth peanut butter
2 sticks unsalted butter, melted and cooled
2 cups firmly packed light brown sugar
3 large eggs
2 teaspoons vanilla
2 cups chopped peanut butter cups
1-1/2 cups peanut butter chips
1/2 cup chocolate chips
Additional peanut butter cups (about 20)

DIRECTIONS
Linea 9 x 13 inch pan with aluminum foil, allowing the foil to hang over the sides of the pan, and spray with nonstick cooking spray. Preheat the oven to 350 degrees. Stir together the flours, baking powder and salt. Set aside. In a sized mixer bowl, stir together the melted butter and peanut butter. Whisk in the brown sugar, eggs, and vanilla. Switching to a wooden spoon or a spatula, mix in the flour mixture. Stir in the chips and peanut butter cups. The dough will be thick and chunky. Scrape the dough into the prepared pan and spread it in evenly. Bake for 30-35 minutes; the bars are done when the dough is set and golden. Immediately after removing the bars from the oven, press as many peanut butter cups as you want into the surface of the blondies. Let the pan and bars cool completely on a cooling rack. Lift the cookies from the pan remove the foil and cut into bars.

Blondies, infinitely adaptable


I wanted to make something with pistachios, since my sister likes them and her graduation party is coming up. Since I like to test out recipes before serving them, I tried this blondie recipe with about 3/4 cup of white chocolate chips and crushed pistachios (I couldn't tell you how much...maybe 1/4 cup?) as well as a pistachio cookie recipe. The cookie recipe won out in this instance....I think this blondie recipe would be awesome with chocolate and peanut butter, and maybe some crushed peanut butter cups. These were very good and buttery, but I think the cookie was sweeter and also has oatmeal in it, so it gave more texture. I will be trying out this blondie recipe again with different mix-ins!

INGREDIENTS
8 tablespoons butter, melted
1 cup brown sugar
1 egg
1 teaspoon vanilla or 1/2 teaspoon almond extract
Pinch salt
1 cup all-purpose flour

DIRECTIONS
Butter an 8×8 pan. Mix melted butter with brown sugar – beat until smooth. Beat in egg and then vanilla. Add salt, stir in flour. Mix in any additions (below). Pour into prepared pan. Bake at 350°F 20-25 minutes, or until set in the middle. Cool on rack before cutting them.

Further additions, use one or a combination of:
1/2 to 1 cup chopped nuts, toasting them first for even better flavor
1/2 to 1 cup chocolate chips
1/2 teaspoon mint extract in addition to or in place of the vanilla
1/2 cup mashed bananas
1/4 cup bourbon, scotch or other whiskey; increase the flour by one tablespoon
2 tablespoons of espresso powder with the vanilla
Stir 1/2 cup dried fruit, especially dried cherries, into the prepared batter
Top with a vanilla butter cream or chocolate peanut butter cream frosting

Chipster Topped Brownies



I hate to say this, but I was disappointed with these. I know, how could you go wrong with brownies and chocolate chip cookies combined?! However, I didn't stick to this original recipe posted below. I used my brownie recipe from "Peppermint Cookies n Cream Brownies" (omitting the oreos) from http://www.bakingbites.com/ because it's hard to find a good brownie recipe and that one is my favorite. Then I used the cookie recipe posted below. The baking times were different - the brownies called for 35 minutes and the entire recipe below noted 50-55 minutes. I kept checking on the brownies, but for some odd reason the brownies were undercooked after 40 minutes and the cookie part was overcooked! Also, the chocolate chips settled to the bottom of the cookie base. Maybe I'll try again with the exact recipe below? Or, try the other "recipe" I saw on another blog with boxed brownies and a package of cookie dough?! Sounds so easy, but almost like cheating!

INGREDIENTS

BROWNIE LAYER
6 oz bittersweet chocolate, coarsely chopped
3 oz unsweetened chocolate, coarsely chopped
2 sticks unsalted butter, cut into chunks
1 2/3 cup sugar
4 large eggs
1/2 tsp salt
1/2 tsp vanilla extract
1 cup all-purpose flour
1 cup walnuts


COOKIE LAYER
1 1/4 cups all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 sticks of butter, room temperature
3/4 cup packed brown sugar
2/3 cup sugar
1 large egg
1 large egg yolk
1 tsp vanilla extract
6 oz bittersweet chocolate, either chips or chunks

DIRECTIONS
Center a rack in the oven and preheat the oven to 350F. Butter a 9×13 inch pan, line it with wax or parchment paper and butter the paper (I used aluminum foil). Put the pan on a baking sheet.

To Make the Brownie Batter: Put both chocolates and the butter in a bowl set over a saucepan of simmering water. Stirring occasionally, heat just until the ingredients are melted, shiny and smooth. If the mixture gets too hot, the butter will separate from the chocolate. Remove the bowl from the heat. Working with a stand mixer, preferable fitted with a paddle attachment, or working with a hand mixer in a large bowl, beat the sugar and eggs on medium-high speed for about 2 minutes, until pale, thick and creamy. Beat in the salt and vanilla extract. Reduce speed to low and mix in the melted chocolate and butter, mixing only until incorporated. Scraped down the sides of the bowl with a rubber spatula, then, still on low speed, add the flour, mixing only until it disappear into the batter. Using a spatula, fold in the walnuts, and scrape the batter into the prepared pan. Set aside.

To Make the Cookie Dough: Whisk together the flour, baking soda and salt. Working with the stand mixer in the cleaned bowl or with the hand mixer in another large bowl, beat the butter and both sugars together on medium-high speed until smooth and creamy, about 3 minutes. One at a time, add the egg and the yolk, beating for 1 minute after each addition. Beat in vanilla. Reduce the mixer speed to low and add the dry ingredients, mixing only until they disappear into the dough. Still on low, mix in the chocolate. Drop the cookie dough by spoonfuls over the brownie batter and, using a spatula and a light touch, spread evenly over the batter. Bake for 50-55 minutes, or until the cookie top is deep golden brown and firm and thin knife inserted into the brownie layer comes out with only faint streaks of moist chocolate. Transfer the pan to a rack and cool to room temperature.When the brownies are completely cool, carefully run a knife between the sides of the pan and the brownies, then invert them onto another rack, remove the paper and turn right side up onto a cutting board. Cut into bars about 2 inches X 1 inch.

Baker's Edge Signature Cookie Bars



A pan with only edges?! Yes, it exists! My brother got me this for Christmas - it's called the Baker's Edge pan and only makes bars/brownies that have edges so every piece is cooked evenly. I had to try one of their recipes (if I try one of my own I will have to experiment with cooking times...). Since I didn't have all of the ingredients for their brownies, I tried their cookie bars. They were very crispy (maybe I baked them too long despite the instructions?). I noticed the batter was very thick as well. Still very good - my husband said he liked dipping them in a glass of milk ....after they were gone of course, so I didn't get to try this!

INGREDIENTS
½ cup Unsalted Butter, Softened
1 ¼ cup Brown Sugar
1 ea Egg
2 tsp Vanilla Extract
½ tsp Baking Soda
½ tsp Baking Powder
½ tsp Salt
1 ¾ cups All Purpose Flour
2 tsp Instant Coffee
1 cup Chocolate Chips / Candy Pieces

DIRECTIONS
1. Preheat oven to 350ºF.
2. Beat the butter and the sugars until light and fluffy. Beat in the egg and vanilla extract until just combined.
Add the dry ingredients and beat into the butter mixture just until combined. Stir in the chocolate chips or other candy pieces.
3. Divide the dough into 4 balls and roll each into a log. Place each log into a section of the pan and spread evenly (logs should join at pan bends).
4. Bake for 30 minutes or until lightly browned.

Chewy, Fudgy Triple Chocolate Brownies



I stumbled upon a new blog and found some really great recipes! http://www.annie-eats.com/ is not just a baking blog, so maybe I'll try some of her non-baking concoctions. (I said maybe.) I have been looking for a brownie recipe that rivals box brownies and this one takes the cake! I feel like a terrible baker since I always loved box brownies as opposed to my homemade ones (with the exception of the mint cookies n' cream brownies I make, they're fabulous but a little too holiday-esque for any other time of year.) These are dense and chewy and very chocolatey! I'm so excited I finally found another brownie recipe I can repeat. Maybe next time with some peanut butter chips??? :)




INGREDIENTS
5 oz. semisweet or bittersweet chocolate, chopped
2 oz. unsweetened chocolate, chopped
8 tbsp. unsalted butter, cut into quarters
3 tbsp. cocoa powder
3 large eggs
1¼ cups sugar
2 tsp. vanilla extract
½ tsp. salt
1 cup all-purpose flour


DIRECTIONS

Place an oven rack in lower-middle position and preheat the oven to 350° F. Line an 8-inch square baking dish with foil and spray lightly with nonstick cooking spray; set aside.
In a heatproof bowl set over a pan of barely simmering water, melt the chocolate and butter, stirring occasionally until smooth. (I just melted together on the stove in a pot.) Whisk in the cocoa powder until smooth. Set aside to cool.
In a medium bowl, combine the eggs, sugar, vanilla and salt; whisk until combined, about 15 seconds. Whisk in the warm chocolate mixture until incorporated. Then stir in the flour with a wooden spoon until just combined. Pour the mixture into the prepared pan and spread with a spatula to make an even layer. Bake until slightly puffed and a toothpick inserted in the center comes out with a small amount of sticky crumbs clinging to it, 35-40 minutes. Transfer the pan to a wire rack and let cool to room temperature, about 2 hours.
Remove the brownies from the pan using the foil and transfer to a cutting board. Cut into squares as desired. Store in an air-tight container.

White Chocolate Gingerbread Blondies


Oh. My. God. Fabulous. These are the winner for the Christmas Party. They were so good and very holiday-esque. (Can you tell I'm obsessed with Gingerbread lately?) I even put the tree in the background of the picture for added effect ;) I almost didn't try them out, but as I was asking my husband's opinion on what to make he said "I love blondies!". Thank you, Dan. This recipe calls for a 17x12 pan, which I don't have and even if I did I didn't want 4 dozen bars if they were terrible. So, I made them in an 8x8 pan and made 1/3 of the recipe. I set the timer for 13 minutes (which wasn't enough) and kept checking every couple of minutes until they looked done. You don't want to overbake these - I think mine were slightly underbaked and they were very chewy! I will definitely be making these again (most likely in a 13x9 pan using half of the recipe).

INGREDIENTS - Makes about 4 dozen 2-inch squares
Vegetable-oil cooking spray
2 3/4 cups plus 1 tablespoon all-purpose flour
1 1/4 teaspoons baking soda
1 1/4 teaspoons salt
1 1/4 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves
2 1/2 sticks (20 tablespoons) unsalted butter, room temperature
1 1/4 cups packed light-brown sugar
1/2 cup plus 2 tablespoons granulated sugar
2 large eggs plus 1 large egg yolk
1 1/4 teaspoons pure vanilla extract
1/3 cup unsulfured molasses (I used honey)
10 ounces white chocolate, coarsely chopped

DIRECTIONS
1. Preheat oven to 350 degrees. Coat a 17-by-12-inch rimmed baking sheet with cooking spray. Line bottom with parchment cut to fit, and coat parchment. Whisk together flour, baking soda, salt, and spices.
2. Beat butter and brown and granulated sugars with a mixer on medium-high speed until pale and fluffy. Add eggs and yolk, 1 at a time, beating well after each addition and scraping down sides of bowl as needed. Beat in vanilla and molasses. Reduce speed to low. Gradually add flour mixture, and beat until just combined. Stir in white chocolate.
3. Spread batter into prepared pan. Bake until edges are golden, about 25 minutes. Let cool completely in pan on a wire rack. Cut into 2-inch squares or desired shape. Blondies can be stored in an airtight container for up to 1 week.

Snickerdoodle Blondies


Another one of my experiments for the Christmas party but this also didn't win. These cookie bars are good, don't get me wrong. I've seen these on a few blogs before and they get rave reviews, which is maybe why I was slightly disappointed. I was thinking they were going to be the best thing I ever tasted! Worth making again though :)

INGREDIENTS - makes 30 bars
2 2/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon Kosher salt
2 cups packed brown sugar
1 cup butter, at room temperature
2 eggs, at room temperature
1 tablespoon vanilla extract
2 tablespoons white sugar
2 teaspoons cinnamon

DIRECTIONS
Preheat oven to 350F. Lightly grease a 9 x 13 inch pan. Sift together flour, baking powder and salt and set aside. In large bowl, beat together butter, sugar, egg and vanilla until smooth. Stir in the flour mixture until well blended. Spread evenly in prepared pan (mixture will be somewhat cookiebatter-ish). I used my wet hands to spread the batter into the pan. Combine white sugar and cinnamon in a little bowl. Evenly sprinkle cinnamon sugar mixture over the top of the batter.Bake 25-30 minutes or until surface springs back when gently pressed. Cool slightly. While still warm, cut into bars with a sharp knife.

Gingerbread Bars with Lemon Cream Cheese Icing

These were yummy :) They are cakey and muffin-like and the icing gave it something extra. I made half of the recipe in an 8x8 pan since I made a few desserts in testing them out for my parent's Christmas Party this weekend. I love trying new recipes but hate serving them if they're not great or just okay. These were good, however, I will be going with another dessert for the party (Gingerbread Blondies - fabulous!!) in addition to the obligatory Premier Cranberry Cheesecake Bars and Cookies n' Cream Mint Brownies (recipe for that will be up next week after I bake them!).

INGREDIENTS
1/4 cup butter, softened
3/4 cup sugar
1 egg1 tablespoon McCormick® Ground Ginger
1 teaspoon McCormick® Ground Cinnamon
1 1/4 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup molasses (I used honey since I didn't have molasses)
2 tablespoons water

Lemon Cream Cheese Icing
8 ounces cream cheese, softened
1/2 cup sugar
2 tablespoons lemon juice
1 teaspoon McCormick® Pure Lemon Extract

DIRECTIONS
1. Grease 9x13x2-inch baking pan. Preheat oven to 350ºF.
2. Cream butter in large mixer bowl. Beat in 3/4 cup sugar, egg, ginger, and cinnamon.
3. Combine flour, baking soda, and salt in a small bowl. Add to butter mixture and mix well. Stir in molasses and water; mix until just blended. Spread in prepared pan.
4. Beat Lemon Cream Cheese Icing ingredients until smooth. Using 1/2 cup lemon icing, spoon dollops (about 1 teaspoon each) over batter in pan. With a knife, swirl through ginger base with large strokes. Bake 28-30 minutes or until batter begins to pull away from pan edges. Cool 30 minutes.
5. Spread remaining lemon icing over bars. Cut using a sharp knife. Store in refrigerator. (My kitchen counter was fine since our heat isn't working....the beauty of living in an old house!)

Premier Cheesecake Cranberry Bars

This are the best bars (and while we're at it, dessert) I've ever made. I credit these bars to getting me into baking a few years ago. That says a lot being that I'm a chocoholic. They're a staple around the holidays. I will have to say that they are a bit messy and fall apart easily but the best way to avoid that is lining the pan with foil. Before cutting, place them in the fridge for at least a few hours. Then you can take the whole dessert out with the foil and cut them into bars. Otherwise, it can be a crumbly mess and you will end up eating half of them before you even get to serve them! Trust me!


INGREDIENTS
2 cups all-purpose flour
1 1/2 cups quick or old-fashioned oats
1/4 cup packed light brown sugar
1 cup (2 sticks) butter or margarine, softened
2 cups (12-oz. pkg.) White chips
1 pkg. (8 oz.) cream cheese, softened
1 can (14 oz.) Sweetened Condensed Milk
1/4 cup lemon juice
1 teaspoon vanilla extract
1 can (16 oz.) OCEAN SPRAY® Whole-Berry Cranberry Sauce
2 tablespoons cornstarch


DIRECTIONS

Preheat oven to 350° F. Grease 13 x 9-inch baking pan. I find the way for these to be as neat as possible is to line the pan with foil and grease the foil. This way you can take the entire thing out of the pan and cut into bars when you're finished. Combine flour, oats and brown sugar in large bowl. Add butter; mix until crumbly. Stir in morsels. Reserve 2 1/2 cups morsel mixture for topping. With floured fingers, press remaining mixture into prepared pan. Beat cream cheese in large mixer bowl until creamy. Add sweetened condensed milk, lemon juice and vanilla extract; mix until smooth. Pour over crust. Combine cranberry sauce and cornstarch in medium bowl. Spoon over cream cheese mixture. Sprinkle reserved morsel mixture over cranberry mixture. Bake for 35 to 40 minutes or until center is set. Cool completely in pan on wire rack. Cover; refrigerate until serving time (up to 1 day). Cut into bars.

Triple Espresso Brownies

Oh, how I love brownies from a box...they are better than any brownies I've ever made! This recipe uses boxed brownies (I used Pillsbury Chocolate Fudge since I couldn't find their "Rich & Moist Fudge Brownie Mix") and espresso. I also didn't have instant espresso powder so used instant coffee. I thought it still had a strong coffee taste but my husband said they didn't taste like coffee. (He also likes Starbucks where as I have to water it down!). All in all, these brownies from Pillsbury.com were very good and had the "brownies from a box" taste that I love so much!

BROWNIES
1 (19.5-oz.) pkg. Pillsbury® Rich & Moist Fudge Brownie Mix
1/2 cup oil
1/4 cup water
2 eggs
2 teaspoons instant espresso coffee granules
1 teaspoon vanilla

FILLING
1/4 cup butter or margarine, softened
1/2 cup firmly packed brown sugar
1 egg
2 teaspoons instant espresso coffee granules
1 teaspoon vanilla
1 cup coarsely chopped walnuts (I omitted)
12 oz. sweet dark or bittersweet chocolate, coarsely chopped

GLAZE
1/2 cup semisweet chocolate chips
1 tablespoon butter or margarine
1/8 teaspoon instant espresso coffee granules
1 to 2 teaspoons milk or whipping cream

DIRECTIONS
1. Heat oven to 350°F. Grease bottom only of 13x9-inch pan. In large bowl, combine all brownie ingredients; beat 50 strokes with spoon. Spread in greased pan. Bake at 350°F. for 28 minutes. Remove from oven.
2. Meanwhile, in small bowl, beat 1/4 cup butter and brown sugar until light and fluffy. Add 1 egg, 2 teaspoons coffee granules and 1 teaspoon vanilla; blend well. In medium bowl, combine walnuts and chopped chocolate. Add brown sugar mixture; blend well.
3. Spoon and carefully spread filling over baked brownies. Return to oven; continue to bake an additional 17 to 20 minutes or until light brown.
4. In small saucepan, melt chocolate chips and 1 tablespoon butter over low heat, stirring constantly until smooth. Remove from heat. With wire whisk, stir in 1/8 teaspoon coffee granules and enough milk for desired drizzling consistency. Drizzle over warm brownies. Cool 45 minutes or until completely cooled. Cut into bars.
